Limey Guacamole

10-12 sprigs fresh cilantro
1 medium fresh jalapeno, deseeded
4 fresh scallion whites
4 Hass avocados
Fresh juice from 1 medium lime
½ cup dried cranberries, chopped fine
2 tablespoons TSIG Persian Lime Olive Oil
Sea salt


1. Place cilantro, jalapeno and scallion in food processor and pulse until chopped fine. (Alternatively chop by hand until fine.) 

2. Halve avocados, remove pits and scoop flesh from peel into medium sized mixing bowl.

3. Roughly mash avocados with fork, making sure to keep it chunky. 

4. Add chopped ingredients to bowl along with lime juice, olive oil, a pinch or two of sea salt and roughly mash some more until combined.

5. Garnish with tortilla chips and serve immediately.
